Recipe: Saint Patrick’s Day Pot Of Gold Soup

Ingredients:

* 2 tablespoons butter
* 1 onion, finely chopped
* 3 medium apples
* 2 medium butternut squashes (about 3 pounds)
* 1 cup apple juice or cider

* 3 cups chicken stock
* 2 tablespoons brown sugar
* 1 tablespoon pumpkin pie spice
* Salt and pepper

Instructions

1.Melt the butter in a saucepan over low heat. Add the chopped onion and saute until soft and translucent. Remove the onion from the heat.

2.Now set your kids to work peeling the apples while you peel, seed, and chop the squash. Core and chop the peeled apples.

3.Add the apples, squash, juice or cider, and chicken stock to the onions and bring to a boil. Then lower the heat and simmer partially covered for 25 minutes.

4.Add the brown sugar, pumpkin pie spice, and salt and pepper. Puree the soup, reheat, and serve. Makes 6 to 8 servings.

Ingredients:

* 2 1/2 pounds boneless corned beef brisket (approximately) with seasoning packet
* 3 large potatoes, peeled and cut into chunks
* 1 (12-ounce) bottle nonalcoholic beer
* 1 small head of cabbage, shredded or cut into 1/3-inch slices
Directions
1. Trim the brisket of all visible fat and remove the seasoning packet from the package.
2. Place the brisket in the bottom of a slow cooker and sprinkle the seasonings from the packet evenly over the top.
3. Spread the potatoes evenly over the top of the brisket and pour the beer over the potatoes. Cover the slow cooker, set it on low, and let it cook for about 7 hours. After about 4 to 5 hours, you can spoon some of the broth in the bottom of the slow cooker over the potatoes, if desired.
4. About an hour before you serve the dish (or after 7 hours of cooking), place the shredded cabbage over the top of the potatoes, cover again, and cook for an hour or so longer, or until the cabbage is just tender.
5. Serve this dish in individual soup dishes-with each serving getting a nice chunk of the corned beef, plenty of potatoes and cabbage, and a spoonful of broth ladled over the top.

Valentine’s Day Brownies

What You Need!
4 squares BAKER’S Unsweetened Chocolate
3/4 cup (1-1/2 sticks) butter
2 cups sugar
3 eggs
1 tsp. vanilla
1 cup flour
1 cup coarsely chopped PLANTERS Walnuts
1 cup ready-to-spread vanilla frosting
1/4 cup multi-colored sprinkles
Make It!

HEAT oven to 350°F. Line 13×9-inch pan with foil, with ends of foil extending over sides. Grease foil. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Add sugar; mix well. Blend in eggs and vanilla. Stir in flour and nuts; spread into prepared pan.

BAKE 30 to 35 min. or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool completely.

USE foil handles to lift brownies from pan to cutting board. Cut into heart shapes with 2-inch cookie cutter. Reserve scraps for snacking or other use. Decorate cutouts with frosting and sprinkles.

Thumbprint Heart Cards For Valentine’s Day

My daughter’s teacher said we have to MAKE all of our Valentine’s cards this year. No pressure right!? I’m dying over here. So, I spent some time online and found a few options that seem easy and manageable for the young (and me).

What you’ll need:

* ½ sheet of pink construction paper
* Red acrylic paint
* White paint pen, white paint, or tiny wiggle eyes
* Black fine point marker

How to make it:

1. Fold the half sheet of construction paper in half and crease to create your card.
2. Dip thumb in red paint and press onto card at a slight angle to the right. Repeat on the left, lining up the bottom of your thumb with the bottom of the first thumb print. This should create a heart shape. Let the thumbprint dry.
3. Use a black marker to write a Valentine greeting on the front of the card.
4. Add arms and legs with the black marker. Use a white paint pen to dot on two eyes.
5. When white is dry, add two black dots to the two whites with black marker.
6. Write a message inside the card.

Tips:

1. If you don’t have a white paint pen, you can dot on white paint with a toothpick or the handle end of a small paint brush.
2. Instead of construction paper, you can use colorful card stock for this project.
3. Construction paper provides hours of fun and stimulates your child’s imagination!
